Lebanese Parfait, please.

In one bite, I'm transported. I even felt a warm breeze and a sunbeam of early summer. Is this possible? I'm indoors.


This treat feels like a splurge, but it's so easy to assemble it practically makes itself. Best part? It's ready in under 5 minutes.


In a bowl, combine:

  • 2 cups of thick, plain Greek yoghurt or labneh*

  • 1 tsp rose water

  • 1 tsp ground cardamom

  • 1/2 tsp lemon zest

Plate in a beautiful serving bowl or plate, and top with:

  • 1 tbsp chopped pistachios

  • 2 tbsp pomegranate seeds

  • drizzle of olive oil

  • fresh mint






*Greek yoghurt is best, and if yours seems too runny for your liking, you can strain out the excess liquid overnight in the fridge using cheesecloth.
