Gambas a la Plancha

Simple is always better.

And especially when it comes to seafood. And not just any seafood, but grilled seafood...Spanish-style.

All you need are skewers, unpeeled and whole prawns or shrimp (yes, there's a difference). olive oil and sea salt. Oh, and fire.

A la plancha

First, rinse and assemble your shrimp, skewering in two places as shown. If you are using whole shrimp with heads and pincers intact (preferable), then skewer only once through the body.

Next, drizzle with olive oil and sea salt and place skewer on the grill (pictured right). Do not remove the shells. This is necessary to retain the flavor.

They'll need only about 1 minute maximum on each side, or until they turn a lovely shade of salmon.

Lastly, remove from the grill, drizzle with a little olive oil and serve.
